Country Breakfast

4 servings

1  cup uncooked brown rice
1/8  teaspoon salt
3  cups water
1  Tablespoon butter
1/2  cup chopped prunes or raisins
1  teaspoon cinnamon

1.  Combine all the ingredients in a medium saucepan.
2.  Bring to a boil, stirring once or twice.
3.  Reduce heat to a simmer.
4.  Cover and simmer until the rice is tender and the liquid is absorbed, 
about 45 minutes.
5.  Fluff with a fork.
6.  Serve with milk, or honey, or brown sugar, or fresh fruit.
