ROLLED OATS APPLE PIE

1 cup quick oats
2 cups flour
3/4 cup solid vegetable shortening, I use Crisco

1/2 cup firmly packed brown sugar
1/4 cup butter, melted
1/2 teaspoon salt
For the Filling:
1 cup sugar
2 Tablespoons cornstarch
1/2 teaspoon cinnamon
1 cup water
6 cups apples, cored, peeled and sliced
Instructions
1. Preheat oven to 300°.
2. In a large bowl, thoroughly combine all the crust
ingredients with your fingertips.
3. Reserve 1 cup for the topping. Set aside.
4. Press the remaining crust mixture into a 9 inch pie
pan. Set aside.
5. Peel, core and slice apples. Set aside.
6. In a 3 quart saucepan, whisk together all of the filling ingredients, except for the apples, and cook over a medium to medium/high heat, while constantly stirring, for 5 minutes. The syrup should come up to a full boil and thicken during the final 60 - 90 seconds.

7. Add in the apples, all at once, and cook, over medium/high heat, for 5 minutes more. Stir while cooking.
8. Pour the cooked apple mixture into the prepared pie shell.
