ALMOND MEAL CHOCOLATE CHIP COOKIES

Ingredients:
2 cups almond meal
¼ cup flour
⅓ cup chocolate chips
⅓ cup brown sugar
½ cup shredded unsweetened coconut
½ teaspoon baking powder
¼ teaspoon salt
1 egg
3 Tablespoons butter, softened
1 teaspoon vanilla
Instructions:
1. Preheat
oven to 375°.
2.In a small bowl, whisk up the egg, with a fork, until uniform in color.

a medium mixing bowl, mix together the whipped egg and all the remaining
ingredients, with a metal spoon.

until well combined.
5. Divide the dough into 12 balls. They will seem large.

the dough onto a parchment paper lined cookie sheet.
7. Press
down and flatten the cookies slightly.
(Whatever
shape and size you make them right now is the size and shape they will be when
they are baked.)
8. Bake
at 375° for 25-27 minutes or until the edges begin to brown.
9. Best
served warm, straight from the oven.
10. Do not refrigerate.
11. Best left uncovered or lightly covered with a towel on counter top.
