Sweet and Sour Salad Dressing

SWEET AND SOUR SALAD DRESSING
FOR GREEN SALADS
Makes about 1 cup of dressing

Ingredients
¼  cup apple cider vinegar
½  cup sugar
¾  cup water
1  egg
1  Tablespoon cornstarch
1/4 teaspoon salt

Instructions
1.  In a small saucepan, combine the apple cider vinegar, sugar and water.  Set aside.
2.  In a small bowl, mix together the egg, cornstarch and salt.
Whip it up nice, with a fork to make a slurry that has no lumps.
3.  Add the whipped egg mixture to the saucepan and cook the dressing over medium heat. Use a whisk to frequently stir the dressing.
4.  Let the dressing come up to a boil and then allow it to boil for 1 minute; this should take about 6-7 minutes from start to finish.
5.  Pour the dressing into a small bowl or container or your choice and store in the refrigerator.
